HIGIENE Y HEGEMONÍA EN EL SIGLO XIX. IDEAS SOBRE ALIMENTACIÓN EN EUROPA, MÉXICO Y GUADALAJARA

En este artículo se analizan algunos textos decimonónicos y de principios del siglo XX que, directa o indirectamente, tratan el tema de la alimentación y la higiene. La intención es revelar la peculiar hegemonía cultural mantenida por Europa sobre las zonas occidentalizadas desde la conquista, como las ciudades de México y Guadalajara. Dicha hegemonía incide en la concepción que se tenía sobre la correcta ración alimentaria y la actitud correcta ante los alimentos de carne. En tanto ciencia heredada del Viejo Mundo, la burguesía industrial siguió dándole a la higiene un perfil clasista que le impedía acceder a las mayorías. Aunque con algunos desfases, es notorio que los científicos y escritores de dichas zonas establecían sus interpretaciones bajo estructuras de pensamiento comunes.

In this article, various texts from the nineteenth and early twentieth century are analyzed, which either directly or indirectly deal with the themes of nutrition and hygiene. The intention is the reveal the peculiar culture of power that Europe maintained in the New World from the time of the conquest in such cities as Mexico City and Guadalajara. This influence is clear in the conceptions held about the correct size of servings and the “correct” attitudes regarding the consumption of meat. In keeping with ideas from the Old World, the industrial leaders continued to treat hygiene as a question of class, and kept it from the majority of the population. With certain exceptions, it is clear that scientists and writers of the day established their ideas on the basis of their own shared ideas.
